Pure Pleasure: Jain Vegetable Pulao for the Soulful Palate |Veg Pulao Recipe | Simple & Easy Vegetable Pulao








Ingredients:

  1. 2 cups long grain rice, rinsed and drained
  2. 1/2 cup finely chopped onions
  3. 2 cloves garlic, minced
  4. 1 inch piece of ginger, peeled and minced
  5. 1 teaspoon cumin seeds
  6. 1 bay leaf
  7. 1 inch piece of cinnamon stick
  8. 2 green cardamom pods
  9. 3 cloves
  10. 1/2 teaspoon turmeric powder
  11. 1/2 teaspoon coriander powder
  12. 1/4 teaspoon garam masala powder
  13. 1/4 teaspoon salt
  14. 1/2 cup mixed vegetables, chopped (carrots, peas, potatoes, green beans, etc.)
  15. 1/4 cup chopped cilantro leaves

Instructions:

  1. Heat the ghee in a large pot over medium heat. Add the cumin seeds, bay leaf, cinnamon stick, and cardamom pods and cook for 30 seconds, or until fragrant.

  2. Add the onions, garlic, and ginger and cook for 5 minutes, or until softened.

  3. Add the turmeric powder, coriander powder, garam masala powder, and salt and cook for 1 minute, stirring constantly.

  4. Add the rice and vegetables and stir to coat.

  5. Add 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through.

  6. Remove from heat and let stand for 5 minutes before fluffing with a fork.

  7. Garnish with cilantro leaves and serve hot.

Tips:

  • For a more flavorful pulao, you can make a pulao masala paste by combining 1/2 cup cilantro leaves, 1/4 cup mint leaves, 1 inch ginger, 2 cloves garlic, 2 green chilies, 2 cardamom pods, 1 inch cinnamon stick, 5 cloves, and 1 teaspoon fennel seeds in a blender and pureeing until smooth.

  • You can use any vegetables you like in your pulao. Some other popular options include peas, carrots, potatoes, green beans, corn, and mushrooms.

  • If you are using frozen vegetables, thaw them before adding them to the pot.

  • If you are using a rice cooker, simply add all of the ingredients to the rice cooker and cook according to the manufacturer's instructions.
