 Instant Nylon Khaman dhokla |healthy Sancks |homemade food 



Ingredients:

  • 2 cups besan (chickpea flour)
  • 1/4 cup sugar
  • 1/4 tsp turmeric powder
  • 1/2 tsp salt
  • 1 cup water
  • 2 tbsp oil
  • 2 tbsp lemon juice
  • 1 tsp Eno (or baking soda)
  • 1/4 cup water (for tempering)

For Garnishing :

  • 1/2 cup grated coconut
  • 1 tbsp finely chopped coriander leaves
  • 1 green chili, finely chopped (for tempering)
  • Few curry leaves (for tempering)
  • 1/2 tsp mustard seeds (for tempering)

How to make Instant Nylon Khaman dhokla:


  1. In a large bowl, combine besan, sugar, turmeric, and salt. Gradually add water while whisking to form a smooth and lump-free batter. Make sure the batter is on the thinner side.
  2. Cover the bowl and let the batter rest for 15 minutes.
  3. Add oil and lemon juice to the batter and whisk well for another 5 minutes until frothy.
  4. Now, add Eno  or baking soda  mixed with 2 tbsp water to the batter. Gently fold it in until the batter becomes fluffy and aerated.
  5. Grease a steamer plate or tray. Pour the batter into the prepared plate, spreading it evenly.
  6. Place the plate in a steamer filled with boiling water. Cover and steam for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the khaman steams, prepare the tempering. Heat oil in a small pan add mustard seeds and let them crackle. Then, add green chili and curry leaves. Saute for a few seconds.
  8. Once the khaman is cooked, carefully remove the plate from the steamer. Pour the tempering over the khaman, along with remaining water from the pan. This helps keep the khaman soft and spongy.
  9. Garnish with grated coconut and coriander leaves.
  10. Cut the khaman into squares and serve warm with green chutney or your favorite dipping sauce.

Tips:

  1. Use good quality besan for the best texture.
  2. Make sure the batter is thin and flowing for a lighter khaman.
  3. Don't overmix the batter after adding eno fruit salt, as it can deflate.
  4. You can adjust the amount of sugar and spice according to your taste.
  5. The khaman can be stored in an airtight container in the refrigerator for up to 2 days.
