Soups help us get through the cold winter in a healthy and delicious way. Here is the recipe for, healthiest of all, spinach soup!
 Making spinach soup is easy and requires just a few simple ingredients. So grab a pot, some spinach, and let’s get cooking!

Ingredients:

1 tablespoon olive oil
1/2 cabbage, diced
4 cups vegetable broth
4 cups of chopped spinach leaves
1 cup of coconut cream 
Salt and pepper, to taste
1 tsp cumin powder

How to make spinach soup :

 Heat the olive oil in a large pot over medium heat.
 Add the chooped cabbage to the oil and saute it for 5 minutes or until they turn golden brown.
 Add the broth  and spinach and bring the mixture to a boil. You can also use 4 cups of water instead of the broth.
Reduce the heat and let the soup simmer for 10-15 minutes.
Remove the soup from heat and let it cool slightly.
Use an immersion blender or transfer the soup to a blender and puree until smooth.
 Return the soup to the pot and add the coconut cream.
 Season with salt, cumin powder and pepper, to taste.
 Reheat the soup over medium heat until heated thoroughly.


garnish it with coriander and serve hot and enjoy!
