Ingredients:
For Koftas:
- 1 cup grated paneer (cottage cheese)
- 1/2 cup boiled and mashed raw banana
- 1/4 cup grated carrot (optional)
- 1/4 cup boiled and mashed peas
- 2 tablespoons chopped coriander leaves
- 2 tablespoons chopped mint leaves
- 2 tablespoons chopped cashews or almonds
- 2 tablespoons arrowroot powder or cornflour
- Salt to taste
- 1/2 teaspoon green chili paste (adjust according to taste)
- Oil for frying
For Gravy:
- 1 cup tomato puree
- 1/2 cup cashew nuts
- 1/4 cup melon seeds
- 1 teaspoon green chili paste
- 1/2 cup fresh cream
- 1 teaspoon garam masala
- 1 teaspoon cumin seeds
- 2 tablespoons ghee (clarified butter)
- Salt to taste
- Water as needed
Instructions:
Prepare Koftas:
- In a large bowl, mix together grated paneer, mashed raw banana , grated carrot, mashed peas, chopped coriander leaves, chopped mint leaves, chopped cashews or almonds, cornflour, salt, and green chili paste.
- Form small balls from the mixture and deep-fry them until golden brown. Set aside on a paper towel to drain excess oil.
Prepare Gravy:
- In a blender, make a smooth paste using cashew nuts, melon seeds, and a little water.
- In a pan, heat ghee and add cumin seeds. Once they splutter, add green chili paste. Sauté for a minute.
- Add the tomato puree and cook until the oil separates.
- Add the cashew-melon seed paste and cook for a few more minutes.
- Pour in fresh cream, garam masala, and salt. Mix well.
- Add water to achieve the desired consistency. Let it simmer for 5-7 minutes.
Assemble:
- Just before serving, gently place the koftas in the gravy. Let them soak for a few minutes to absorb the flavors.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
