  • Salt to taste
  • 1/2 teaspoon green chili paste (adjust according to taste)
  • Oil for frying

For Gravy:

  • 1 cup tomato puree
  • 1/2 cup cashew nuts
  • 1/4 cup melon seeds
  • 1 teaspoon green chili paste
  • 1/2 cup fresh cream
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 2 tablespoons ghee (clarified butter)
  • Salt to taste
  • Water as needed

Instructions:

  1. Prepare Koftas:

    • In a large bowl, mix together grated paneer, mashed raw banana , grated carrot, mashed peas, chopped coriander leaves, chopped mint leaves, chopped cashews or almonds, cornflour, salt, and green chili paste.
    • Form small balls from the mixture and deep-fry them until golden brown. Set aside on a paper towel to drain excess oil.
  2. Prepare Gravy:

    • In a blender, make a smooth paste using cashew nuts, melon seeds, and a little water.
    • In a pan, heat ghee and add cumin seeds. Once they splutter, add green chili paste. Sauté for a minute.
    • Add the tomato puree and cook until the oil separates.
    • Add the cashew-melon seed paste and cook for a few more minutes.
    • Pour in fresh cream, garam masala, and salt. Mix well.
    • Add water to achieve the desired consistency. Let it simmer for 5-7 minutes.
  3. Assemble:

    • Just before serving, gently place the koftas in the gravy. Let them soak for a few minutes to absorb the flavors.
    • Garnish with fresh coriander leaves and serve hot with roti or rice.
